Fuzhou's dishes are representative of Min Cuisine (one of the eight major cuisines of China). Min cuisine features chicken, seafood, river fish and shrimp with most dishes being served in soup. The most famous dish is the seafood, meat and vegetable combine uniquely named 'Buddha Jumps over the Wall'. There are also Litchi pork, Shixiangzui spareribs and chicken soup with clams are also highly recommended. As an alternative to Chinese food, several international restaurants can be found throughout the city.

Fotiaoqiang
Talking of famous Fujian dishes, no one will fail to put Fotiaoqiang (literally, Buddha Jumping over the Wall) on the top of the list. The dish was so called because the smell of the dish is so irresistible that Buddhas, will jump over walls to taste it! The dish is made of over 20 types of delicacies, including shark's fin, sea cucumber, chicken, scallop, abalone,and Xianggu mushroom.

Oyster Omelette
If you have tasted Oyster Omelette, you will most probably think Fuzhou people is quite creative, for how many people will coin up the idea of using fresh oyster as the chief stuffing (together with some portion of lean pork meat and celery). The golden omelette is not only a favorite among local folks, but appeals strongly to foreigners as well.

Yanpi Won Ton
The Yanpi won ton is yet another local speciality of Fuzhou. With won ton sheets made by mixing sweet potato flour with pork meat, the authentic Yanpi won ton boasts a variety of stuffing, including fresh fish meat, dried shrimp and celery. The Yanpi won ton is considered to impart a craving for peace and prosperity and as a result is frequently served at local weddings or birthday banquets.
